Greek Salad Canapes

Makes 40

Ingredients
  • 20 large cherry tomatoes on the vine (approx. 3cm diameter)
  • 200g feta cheese, broken up
  • 1 small red onion, finely chopped
  • 1 cucumber, cut in half lengthways, seeds removed, finely diced
  • 1 bunch of oregano, finely chopped
  • 15 pitted black olives, finely chopped
  • 1 heaped tablespoon of capers, finely chopped
Equipment
  • 1 large mixing bowl

Cut the tomatoes in half from top to bottom. Carefully scoop out the seeds. You may need to use a knife to loosen the tomato innards. Carefully cut away all of the tomato stalk.

Put all the remaining ingredients in the mixing bowl and mix well. Season. Carefully spoon the mixture into the tomato halves. Serve.
